This week we’re doing things a bit different by asking folks on the hop what is their favorite 15-minute meal. Here is my response and thanks for dropping in after visiting with Victoria Barbour.
Q: What is your best / favorite 15 minute dinner idea?
I have quite a few quick-fix meals in mind, but I’ll spare my readers and choose two.
Salmon poached in green tea with saute’d onions — yum! And, yes, it’s as easy as it sounds. I usually toss a salad and roast some chopped potatoes with this meal — and a glass of white wine.
My other easy-peasy was something I learned while watching a Japanese drama about a chef who learned how to create Italian dishes (as goofy as that premise might sound to some). I’m not sure what to call it other than by its list of ingredients.
Spaghetti a little on the al dente side (I like angel hair best) mixed with broccoli heads, pinch of garlic & onion, and mushrooms. Now, the sauce can be a number of things: butter, olive oil, tomato paste . . . but I prefer cream of mushroom soup and saute’ing for a few minutes to mix the ingredients. You can sub the soup with chicken broth if you like, either way is good. And, again, I will toss a salad and pour some rose for this meal.
